Ingredients
- 2 pounds veal round steak cut ½ inch
- 3 cups toasted bread cubes
- 2 tbsp sniped parsley
- 2 tbsp chopped celery
- 2 tbsp chopped onion
- 14 tsp rubbed sage
- 1 beaten egg
- 13 cup milk
- 6 slices bacon
- 12 cup water
- Pan gravy
Directions
- Cut veal into 6 pieces, pound to ¼ thickness. Season with salt. Combine bread crumbs, etc. Stir in egg and milk
- Place mixture on meat roll up. Wrap each meat roll with bacon slice. Secure with wooden picks.
- In skillet cook meat rolls till brown and bacon is cooked, – 15 to 20 min.
- Add water, cover and simmer till tender, About 20 min.
- Remove meat to hot platter, keep warm. Prepare pan gravy
- Serve with mashed potatoes.

- 2 cups cooked chopped turkey
- 1 ½ cups celery
- 1 ½ cups onion
- green pepper
- pimento
- mushrooms
- 1 can mushrooms soup or leftover gravy
- 2 tbsp soy sauce
Directions
- Set aside ½ cup rice, 1 cup boiling water, and ½ tsp salt
- Add all remaining ingredients to rice mixture in casserole dish. Bake 350º for one hour and 15 minutes.

Ingredients
- 2 ½ to 3 lbs. hamburger
- 2 eggs
- ½ onion minced
- 1 tsp salt
- ¼ tsp pepper
- 1 tsp all spice
- bread crumbs moistened with water enough but not sloppy
- meat tenderizer
Directions
- Mix
together and make into small balls. Fry in oil in pan a few at a time.
Leave brown stuff in pan. Make paste of flour, seasoning, catsup.
Use to make gravy. Combine meatballs in casserole with gravy.

- 2 tablespoons soy sauce
- 2 tablespoons cider vinegar
- 1 tablespoon brown sugar
- 1/2 teaspoon hot red pepper flakes

- Combine all and heat in wok over medium heat until nicely blended and the sugar melts.

- 2 cloves garlic, chopped
- 1/2 teaspoon of sichuan peppercorns
- 2 tablespoons soy sauce
- 2/3 cup orange juice
- 2 tablespoons cornstarch
- 4 tablespoons water

- Stir
fry the ginger, peppercorns, and garlic in 1 tablespoon of hot oil for a
minute to release the flavors. Add the soy sauce and orange juice and
bring to a boil. Reduce heat to medium and simmer for 5 minutes. Combine
the cornstarch and water and add to the sauce, stirring until the sauce
is thick and bubbly.
