Yams and Apples

Yield

Ingredients

  • 4 large yams
  • 4 large green apples
  • sugar
  • ground cloves
  • butter
  • 2 cup amaretto

Directions

  1. Cook yams in boiling salted water just until tender. Drain. Peel and cut in to 2 inch thick slices.
  2. Pare apples and remove cores. Cut in to thin slices
  3. In a buttered casserole, put alternate layers of yams and apples, sprinkling each layer lightly with sugar and a pinch of ground cloves and dots of butter.
  4. Pour amaretto over all.
  5. Cover and bake in 350 degree oven for 30-40 minutes or until apples are very tender.
  6. Serve with pork, ham or duck.

Wild Rice Casserole

Ingredients

  • 1 pound pork sausage (brown in pan) and combine with
  • 1 medium onion
  • Celery
  • Mushrooms
  • 1 can mushroom soup
  • 1 can cream of chicken soup
  • 1 cup wild rice
  • ½ soup can water

Directions

  1. Bake in 350º oven for 2 to 3 hours till rice breaks open.

Turnip Casserole

This recipe came from the Radbourne Family cook book.

Ingredients

  • 3 cups hot mashed turnip cooked with a potato
  • 3 tbsp butter or margarine\2 eggs
  • 3 tbsp flour
  • 1 tbsp brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt or to taste
  • 1/8 tsp pepper
  • Topping
  • 2 tbsp butter, 1/2 cup cracker crumbs

Directions

  1. Beat turnip, butter and eggs well. In a small bowl mix flour, sugar, baking powder salt and pepper.Add to turnip mixture. Put in 2 quart casserole.
  2. Melt butter and mix with cracker crumbs. Sprinkle over top.
  3. Bake 350 degrees for 35-40 minutes uncovered till brown

Turnip and Apple casserole

  • 1 large turnip
  • 2 apples pealed
  • 1/3 cup flour, brown sugar, butter

Directions

  1. One large turnip,peel, boil and mash with 1 tbsp butter
  2. Put ½ in casserole
  3. Slice 2 apples pealed,
  4. mix ¼ cup brown sugar and cinnamon,
  5. Place on turnips
  6. Put remaining turnips on apples.
  7. Make Crust and place on turnips.
  8. Crust
  9. 1/3 cup flour, brown sugar, butter, Crumble, put on casserole, bake 350 for 1 hour.

Sweet Potato Fries with Curry Mayonnaise

Ingredients

  • 4 sweet potatoes, (2-1/2 lb/1.25 kg)
  • 2 egg whites
  • 1 tbsp (15 mL) vegetable oil
  • 1 tsp (5 mL) ground cumin
  • 1 tsp (5 mL) ground paprika
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 1/2 cup (125 mL) light mayonnaise
  • 1 tsp (5 mL) lime juice
  • 1/4 tsp (1 mL) curry paste

Directions

  1. Peel potatoes; trim ends and sides to create rectangles. Cut lengthwise into 1/2-inch (1 cm) thick slices; cut each lengthwise into 1/2 -inch (1 cm) wide strips.
  2. In large bowl, whisk egg whites until frothy. Whisk in oil, cumin, paprika, salt and pepper. Add potatoes, tossing to coat. Spread on 2 parchment paper–lined rimmed baking sheets.
  3. Bake in top and bottom thirds of 425°F (220°C) oven for 30 to 35 minutes, rotating and switching pans halfway through, until tender and edges are browned and crisp.

  5. Meanwhile, in small bowl, whisk together mayonnaise, lime juice and curry paste; serve with potatoes.
