Apple Brownies

Ingredients

  • 1 cup butter or margarine
  • 1/2 tsp salt
  • 2 cups sugar
  • 2 eggs, beaten
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups peeled sliced granny smith apples
  • 1/2 cup chopped pecans or walnuts

Directions

  1. Cream together butter, salt and sugar. Beat in eggs. Add flour, baking powder, soda and cinnamon; mill well. Add apple slices and nuts. Mixture is quite thick. spread evenly in pan.
  2. Bake at 325 degrees for 35 – 40 min.
  3. Excellent served warm with ice cream

  • 12 tsp salt
  • 2 cups sugar
  • 2 eggs beaten
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups peeled, slice granny smith apples
  • ½ cup chopped pecans or walnuts (opt)

Directions

  1. Preheat oven to 325 degrees F. (160 C) Grease a 9 X 13 pan. Cream together butter, salt and sugar. Beat in eggs. Add flour, baking powder, baking soda and cinnamon, mix well. Add apple slices and nuts. Mixture is quite thick – Don’t be snitching any dough! Spread evenly in pan and bake for 35-40 min. Serve warm with vanilla ice cream or frozen yogurt.

  1. Combine one cup heavy cream, whipped, with 3 tbsp sugar and ½ tsp vanilla. Fold in ¼ cup of quartered maraschino cherries, ¼ cup drained crushed pineapple, ¼ lb. miniature marshmallows, and ½ cup chopped walnuts. Chill.
  2. Cut, with serrated knife, 1 inch slice from top of 10 inch angel food cake. Cut out a ring 2 inches wide and 2 inches deep. Spoon in chilled filling. Replace slice cut from top.
  3. Frost top and sides with 1 ½ pints cream, whipped and sweetened with 3 tablespoons sugar. Chill. Decorate with pineapple chunks and cherries. Makes 12 servings.

Peanut Butter Brownies

Ingredients

  • 1 cup sifted flour
  • 1 tsp baking powder
  • 14 tsp salt
  • 2 tbsp butter
  • 2 square unsweetened chocolate
  • 12 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1/4cup milk
  • ½ cup chocolate chips

Directions

  1. Combine dry ingredients.
  2. Melt butter and chocolate. Add peanut butter and sugar. Beat well. Beat egg and milk together with fork. Ads dry ingredients to wet. Put in 8 inch square pan.
  3. Heat oven 375 degrees.
  4. Bake 20-25 minutes
  5. Remove from oven and put on chocolate chips. Put back in oven for 1 min to soften. Spread softened chocolate over brownies.

Buttery Lemon Square

  • 1 cup butter or margarine
  • ½ cup icing sugar
  • 2 1/3 cup flour
  • 4 eggs
  • 2 cups white sugar
  • 1 tsp grated lemon rind
  • 1 tsp baking powder
  • 6 tbsp lemon juice
  • Extra icing sugar

Directions

  1. In large bowl, work margarine, icing sugar and 2 cups of flour. Spread evenly over bottom of 9 X 13 pan. Bake in 350 degree oven for about 20 min.
  2. In large bowl beat eggs until light, slowly add 2 cups white sugar, lemon juice and rind, remaining 1# cup of flour. And 1 tsp of baking powder.
  3. Pour lemon mixture over base and return to oven and continue cooking approximately 15 to 20 min Remove from oven and sprinkle with extra icing sugar. Allow to cool. To serve cut in squares or bars.
