Apricot Squares

Ingredients

  • Base Ingredients
  • ½ cup butter
  • ¼ cup sugar
  • 1 cup flour
  • Topping Ingredients
  • 1 cup light brown sugar
  • 2 eggs beaten
  • 1/3 cup flour sifted
  • ½ tsp vanilla
  • ½ cup nuts, chopped
  • ½ tsp baking powder
  • pinch salt

Directions

  1. Snip ½ cup dried apricots. Put in sauce pan with water. Cook until soft, but not mushy. Cool.
  2. Base
  3. Mix ingredients till crumbly. Put in greased 8” pan and bake at 350º for 25 minutes
  4. Topping
  5. Beat together brown sugar and beaten eggs. Add flour, baking powder and salt. Blend in vanilla, nuts and the apricots. Spread over baked layer and bake 30 minutes. Cool. Sprinkle with confectioners sugar and cut into squares, using knife dipped in cold water

Apple Pie Cake

  • ¼ cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 cup flour
  • ½ tsp salt
  • 1 tsp soda
  • 1 tsp cinnamon
  • 2 ½ cups apples – peeled and diced
  • 2 tbsp hot water
  • ½ cup nuts chopped

Directions

  1. Bake at 350 degrees for 35 to 45 minutes.

Apple Brownies

  • 1 cup butter or margarine
  • 1/2 tsp salt
  • 2 cups sugar
  • 2 eggs, beaten
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups peeled sliced granny smith apples
  • 1/2 cup chopped pecans or walnuts

Directions

  1. Cream together butter, salt and sugar. Beat in eggs. Add flour, baking powder, soda and cinnamon; mill well. Add apple slices and nuts. Mixture is quite thick. spread evenly in pan.
  2. Bake at 325 degrees for 35 – 40 min.
  3. Excellent served warm with ice cream

  • 1 cup butter or margarine
  • 12 tsp salt
  • 2 cups sugar
  • 2 eggs beaten
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups peeled, slice granny smith apples
  • ½ cup chopped pecans or walnuts (opt)

Directions

  1. Preheat oven to 325 degrees F. (160 C) Grease a 9 X 13 pan. Cream together butter, salt and sugar. Beat in eggs. Add flour, baking powder, baking soda and cinnamon, mix well. Add apple slices and nuts. Mixture is quite thick – Don’t be snitching any dough! Spread evenly in pan and bake for 35-40 min. Serve warm with vanilla ice cream or frozen yogurt.

Directions

  1. Combine one cup heavy cream, whipped, with 3 tbsp sugar and ½ tsp vanilla. Fold in ¼ cup of quartered maraschino cherries, ¼ cup drained crushed pineapple, ¼ lb. miniature marshmallows, and ½ cup chopped walnuts. Chill.
  2. Cut, with serrated knife, 1 inch slice from top of 10 inch angel food cake. Cut out a ring 2 inches wide and 2 inches deep. Spoon in chilled filling. Replace slice cut from top.
  3. Frost top and sides with 1 ½ pints cream, whipped and sweetened with 3 tablespoons sugar. Chill. Decorate with pineapple chunks and cherries. Makes 12 servings.
