White Fruit Cake

Ingredients

  • 1 cup butter
  • 1 ½ cups granulated sugar (sifted)
  • 6 eggs
  • ¼ cup milk
  • 2 ½ cups sifted flour
  • 3 tsp baking powder
  • 2 cups sultana raisins
  • 1 cup candied pineapple
  • ½ cup citron shredded
  • ½ cup candied orange peel shredded.
  • 1 cup blanched almonds
  • 1 tbsp vanilla
  • 1 tsp almond extract
  • candied cherries

Directions

  1. NO directions given. Cream butter and sugar. Add remaining ingredients. Bake in slow oven. 275 for an hour or until toothpick inserted in cake comes out clean.

Special K Squares

Ingredients

  • 1 cup karo (golden) syrup
  • 1 cup white sugar
  • 1 ½ cup peanut butter
  • 6 cups Special K cereal
  • 2 pkg. chocolate chip
  • 1 pkg, butterscotch chip

Directions

  1. Melt together in saucepan, and then cool slightly. Combine with 6 cups Special K cereal. Spread on a large cookie sheet.
  2. Icing: Melt in double boiler, 2 pkg. chocolate chip and 1 pkg, butterscotch chip. Spread over first mixture.

Sour Cream Spice Cake

Ingredients

  • 1 cup brown sugar
  • 1 cup sour cream
  • 1 egg
  • 1 ½ cup flour
  • 1 tsp baking soda
  • ¼ tsp cream of tartar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp salt
  • ½ cup chopped nuts

Directions

  1. Beat brown sugar, sour cream and egg.
  2. Add remaining ingredients
  3. Bake in greased and floured deep square pan.
  4. Frost with caramel frosting

Sopapilla Cheesecake Bars

Ingredients

  • 2 (8ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon Mexican vanilla extract
  • 2 (8 ounce) cans refrigerated crescent rolls
  • ¾ cup white sugar
  • 1 teaspoon ground cinnamon
  • ½ cup butter, room temperature
  • ¼ cup honey

Directions

  1. Oven 350….9×13 pan sprayed with cooking spray
  2. Beat cream cheese with 1 cup sugar and vanilla extract in bowl
  3. until smooth.
  4. Unroll cans of crescent roll dough, and use a rolling pin to shape
  5. each piece into 9 x 13 baking dish.
  6. Press one can into bottom of pan. Evenly spread Cream Cheese mixture
  7. into the pan, then cover with the remaining can of dough. Stir ¾ cup sugar,
  8. cinnamon, and butter. Dot over the top of the cheesecake.
  9. Bake in preheated oven until the crescent dough has puffed and turned golden brown, about 30 minutes. Remove from the oven and drizzle with honey. Cool completely in the pan before cutting into squares.

Scandinavian Almond Cake

This recipe is for a specially designed fluted loaf tin.

Ingredients

  • 1 ¼ cup sugar
  • 1 egg
  • 1 ½ tsp pure almond extract
  • 2/3 cup milk
  • Add:
  • 1 ¼ cups flour
  • ½ tsp baking powder
  • ½ cup melted margarine

Directions

  1. Beat well: sugar, egg, extract and milk
  2. Add remaining ingredients and mix well.
  3. Bake at 350º for 40-50 minutes. Edges must be golden brown. Cool in pan before removing. Cake will break if removed to soon. Sprinkle with confectionery sugar
  4. Variation: before pouring batter into the pan, sprinkle slice almonds on the bottom
