Scalloped Sweet Potatoes in Lemon-Ginger Cream Sauce

Ingredients

  • 3 cups heavy cream
  • 3/4 cup sugar
  • 1/3 cup fresh lemon juice
  • 2 teaspoons fresh ginger, finely minced or use microplane grater
  • 2 teaspoons salt
  • 8 cups sweet potatoes (or yams), peeled, thinly sliced (2-1/2 pounds)

Directions

  1. Boil heavy cream, lemon juice, sugar, ginger and salt in a large pan on high heat. Stir constantly for 15 minutes, reducing to about 2 cups of liquid.
  2. Stir sweet potatoes into cream mixture and transfer to six individual creme brulee dishes or one 2-quart casserole dish.
  3. Bake in a 350 degree oven for 45 minutes. Let rest 15 minutes before serving.

  • 12 gloves garlic
  • 2 tbsp olive oil
  • 1/4 cup white wine
  • 4 cups diagonally sliced asparagus
  • 6 sprigs fresh thyme

Directions

  1. Preheat oven to 350 degrees
  2. Tear off 6 large pieces of foil. Divide ingredients on each piece of foil. Seal foil pouches.
  3. Put on baking sheet and roast for 20 to 25 minutes until asparagus is tender but still crisp. Open packs and serve asparagus with juices poured over top.

Ingredients

  • 3 cups water or chicken broth
  • 1 tsp salt
  • 1 1/2 cups rice, preferably basmati
  • 1 large orange
  • 1/2 cup each dried apricots and dried cranberries
  • 1/2 tsp saffron threads
  • 3/4 cup pistachios in shell
  • 3/4 cup finely chopped parsley or cilantro

Directions

  1. In a large saucepan, bring water and salt to boil. If using chicken broth, omit salt. Add rice to boiling water. Stir, then cover and reduce heat to medium-low. Cook for 10 min.
  2. Meanwhile, finely grate peel from orange. Chop apricots. After rice has cooked 10 min, stir in peel, apricots, cranberries and saffron threads. Cover and continue to cook until water is completely absorbed, from 10 to 15 more min. Meanwhile, shell nuts and chop along parsley. Taste cooked rice and add more salt if needed. Stir in pistachios and parsley.

  • 1 bag thawed frozen hash brown potatoes
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 onion finely chopped
  • 2 cups shredded cheddar cheese

Directions

  1. Mix potatoes, soup, sour cream, onions and 1 1/2 cups cheese and put in greased 9 X 13 baking dish/
  2. Melt 1/4 cup margarine and corn flake crumbs and combine with remaining cheese. Top casserole and bake for 20- to 30 minutes in 350 degree oven.
