Ingredients

  • 1 pkg max veg jelly powder
  • 1 can rose-but beets drained
  • 1 tbsp horseradish
  • 2 tsp vinegar
  • ½ cup celery chopped fine
  • ¾ cup cucumber chopped fine
  • 1 cup hot water
  • ¾ cup cold water

Directions

  1. Combine as for jellied salad and cool till set

Gramma Cumming Salad Dressing

Ingredients

  • 1 tbsp butter
  • 2 eggs
  • ½ cup white sugar
  • 1 tsp salt
  • Beat together and add
  • 1 tbsp flour
  • ½ cup white vinegar
  • 1 cup milk
  • 1 small tsp white pepper

Directions

  1. Cook slowly in double boiler till it is thickened

Curried Chicken Salad

Ingredients

  • ½ cup light mayo
  • ½ cup low fat yogurt
  • ¾ tsp curry powder
  • ¼ tsp salt
  • 3 cups diced chicken
  • 1 ½ cups sliced grapes
  • ¾ cup celery chopped
  • 1/3 cup green onions
  • 2 apples
  • ½ cup pecans chopped
  • 1 cantaloupe
  • lettuce

Directions

  1. Combine mayo, yogurt, curry and salt. Add to next 5 ingredients. Serve with cantaloupe and pecans over greens

Christmas Ribbon Salad

This salad is served at every Christmas dinner.

Ingredients

  • 1 cup boiling water
  • 1 pkg 3 oz raspberry jello
  • 1 pkg – 10 oz frozen raspberries
  • 1 cup boiling water
  • 1 pkg 3 oz orange jello
  • 1 pkg 8 oz cream cheese
  • 1 can -11 oz mandarin oranges
  • 1 cup boiling water
  • 1 pkg lime jello
  • 1 can 8 1/2 oz crushed pineapple

Directions

  1. Preparation for this salad takes several hours. You can substitute strawberries and strawberry jello for the raspberry. Combine boiling water, and first jello until dissolved. add raspberries. Put in refrigerator until almost set.
  2. Combine orange jello, boiling water to dissolve. Stir in cream cheese till smooth. Add oranges with syrup. Pour over raspberry layer. Chill until almost set
  3. Combine lime jello and boiling water to dissolve. Add pineapple with syrup. Pour over orange layer. Chill until set

Christmas Jellied Salad

This salad has been a tradition at our family Christmas dinner

Ingredients

  • Raspberry layer: 1 cup boiling water, 1 small pkg raspberry flavored jello, 1 pkg (10 oz) frozen raspberries.- I have used strawberry jello and strawberries.
  • Orange layer: 1 cup boiling water, 1 small pkg orange jello, 1 8 oz pkg cream cheese, 1 can (11 oz mandarin orange segments
  • Lime layer: 1 cup boiling water, 1 small pkg lime jello, 1 can (8 1/2 oz) crushed pineapple

Directions

  1. Raspberry Layer: pour boiling water on raspberry-flavored gelatin in large bowl, stir until gelatin is dissolved. Stir in frozen raspberries. Chill until thickened slightly but not set, pour into 8 cup mold or 9 X 9 X 2 inch baking pan. chill until almost firm.
  2. Orange Layer: Pour boiling water on orange-flavored gelatin in large bowl. stir until gelatin is dissolved, stir gradually into cream cheese. Chill until thickened slightly but not set. Mix in orange segments (with syrup); pour evenly on raspberry layer, chill until almost firm
  3. Lime layer: pour boiling water on lime-flavored gelatin in large bowl; stir until gelatin is dissolved. Stir in pineapple (with syrup_ Chill until thickened slightly but not set, pour evenly on orange layer. Chill until firm,
  4. Note: this order is for a molded salad. I reverse the order and serve in a crystal bowl. also double the recipe for a crowd. I find leaving about 3 hours before adding the next layer works well. morning, noon, night for next day. Also, I am lazy and put the next layer on another layer when I make it. I have used sugar free jello, light cream cheese and unsweetened fruit.
