Rhubarb Coffee Cake

Ingredients

  • 1 ½ cups brown sugar
  • ½ cup shortening (butter or marg.)
  • 1 cup sour milk or regular milk with 1 tbsp lemon juice
  • 1 ½ cups raw rhubarb
  • 1 egg beaten
  • 1 tsp vanilla
  • 2 cups flour
  • Topping
  • 1 tsp cinnamon
  • ½ cup brown sugar

Directions

  1. Mix all ingredients together and pour into a 9 inch square or round greased and floured cake pan. Sprinkle with topping and bake at 350 degrees for 40 to 50 minutes.
