Peppermint CrunchDark chocolate Cake Mix Cookies

Yield

Ingredients

  • 1 box Betty Crocker Dark Chocolate Cake Mix {15.25 oz.}
  • 1 bag Andes Peppermint Crunch Baking Chips {10 oz.}
  • 1/2 cup Canola or Vegetable Oil
  • 2 eggs

Directions

  1. Combine cake mix, eggs, and oil in large mixing bowl, and beat well.
  2. Stir in Peppermint Crunch Baking Chips
  3. Chill dough in refrigerator for 20 minutes
  4. Drop onto ungreased non-stick cookie sheet in rounded balls.
  5. Bake for approx. 8 – 9 minutes {or until done} at 350 degrees.
  6. ENJOY!!

Pecan Pie Cookies

Ingredients

  • 1 cup firmly packed brown sugar
  • 3/4 cup butter, softened
  • 1 egg
  • 1 tsp. vanilla
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • For Filling:
  • 1 cup chopped pecans
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla

Directions

  1. Heat oven to 350°F.
  2. Combine all cookie ingredients except flour and baking powder in large bowl.
  3. Beat at medium speed until creamy. Reduce speed to low; add flour and baking powder. Beat until well mixed.
  4. Shape dough into 1-1/4-inch balls.
  5. Place 2 inches apart onto ungreased cookie sheets
  6. Make indentation in each cookie with thumb; rotate thumb to hollow out slightly
  7. Combine all filling ingredients in small bowl; fill each cookie with 1 rounded tsp. filling.
  8. Bake for 8 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

Oatmeal Crispies

Ingredients

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs well beaten
  • 1tsp vanilla
  • 1 ½ cup flour
  • 1 tsp salt
  • 1 tsp soda
  • 3 cups oatmeat
  • ½ cup walnuts.

Directions

  1. No directions came with this recipe but I presume you would drop the cookies and bake for about 10 minutes at 350 to 375 degrees

Oatmeal Chocolate Chip

Ingredients

  • 1 ½ cups sifted all purpose flour
  • 1 teaspoon baking soda
  • 1 tsp salt
  • 1 cup lard or margarine
  • ¾ cup brown sugar
  • ¾ cup white sugar
  • 2 eggs
  • 1 tbsp hot water
  • 1 tsp vanilla
  • 1 cup chopped nuts
  • 1 pkg chocolate chips
  • 2 cups rolled oats

Directions

  1. Sift dry ingredients, Cream lard and sugar until light and fluffy, Add eggs, hot water and vanilla. Blend in dry ingredients, nuts, chips and oats.
  2. Drop by teaspoonful on cookie sheet. Bake for 8 to 10 minutes at 350 degrees. Makes 50 to 60 cookies.

  • 1 cup brown sugar
  • ½ cup margarine
  • 2 eggs,
  • 2 tbsp molasses
  • ½ to ¾ cup milk
  • 1 cup chopped dates
  • 2 cup flour
  • ½ tsp baking soda
  • 1 to 2 tsp baking powder
  • cinnamon

Directions

  1. Bake 350 degrees 8 to 10 minutes
