Ingredients
1 dozen
- 2 cups all purpose flour
- 3/4 cup gran. sugar
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup plain yogurt
- 2 tsp grated orange rind
- 1/4 cup orange juice
- 1/4 cup vegetable oil
- 2 eggs
- 1 1/2 cup blueberries
- Topping
- 1/4 cup gran sugar
- 1 tbsp orange rind
- sliced almonds (optional)
Directions
- whisk flour, sugar, baking powder, soda and salt
- Whisk yogurt, orange rind, juice, oil, eggs. Pour over flour misture. sprinkle with blueberries, stir just until dry ingredients are moistened
- spoon into 12 greased or paper lined muffin cups.
- Topping- mix sugar with orange rind and almonds. Sprinkle over batter. bake in 400 degree overn until tops are firm to touch, 25 min.
- transfer to rack – Cool
