Hamburger Soup

This recipe has evolved over the years, and the ingredients can change by what is available

Ingredients

large pot of soup

  • 1 12 lbs of ground beef
  • 1 cup onion
  • 1 cup celery
  • 1 cup chopped carrots, probably 3
  • 1 cup chopped potatoes – probably 3
  • turnip or parsnips
  • 1 can tomato soup
  • water
  • thyme, basil, 1 tsp sugar, salt and pepper

Directions

  1. Brown hamburger, with onions, celery, carrots, (parsnips or turnip – optional) and potatoes. Add tomato juice and water to cover. Add sugar, basil, thyme, salt and pepper to taste. Simmer, the longer the better. I like to add frozen mixed vegetables to boost the vegetable content.
