Italian Spagetti

Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • Add: 1 can tomato paste, (6 oz)
  • 1 can tomatoes
  • 1 can tomato soup
  • 1 ½ tsp cinnamon
  • 1 tsp salt
  • 1 ½ chili powder

Directions

  1. Brown the ground beef and onion. Add the remaining ingredients and cover and simmer for 1 1/2 hours.

Houstan Stew

This recipe came from Mr. Schubring. The men in the Presbyterian church prepared a meal for the women each year, and this is what they served.

Ingredients

  • 2 pounds stewing beef
  • 3 large onions, chopped
  • six carrots cut in 1/2 inch slices
  • 1 cup celery cut in 1/2 inch slices
  • 6 potatoes quartered or as desired

Directions

  1. Mix meat and vegetables
  2. Add: 1 tbsp salt, 1 tbsp sugar, 4 tbsp minute tapioca.
  3. Pour 1 28 oz tin of chopped tomatoes over mixture.
  4. Cover and bake in 250 degree oven for 5 hours.

Hamburger Soup

Ingredients

  • 2 lbs. lean ground beef.
  • Onion
  • Celery
  • Carrots
  • Potatoes
  • Parsnips or turnip
  • Salt
  • Pepper
  • One can tomato juice
  • Basil
  • Thyme
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • frozen mixed vegetables

Directions

  1. Brown ground beef with chopped onion, celery, carrots and potatoes, parsnips and turnips. Add tomato juice and perhaps ½ tin water. Add basil and thyme, vinegar and sugar to taste. Simmer. The longer the better. I usually add a cup or two of mixed vegetables about 10 minutes before you serve.

Hamburger Soup

  • 1 12 lbs of ground beef
  • 1 cup onion
  • 1 cup celery
  • 1 cup chopped carrots, probably 3
  • 1 cup chopped potatoes – probably 3
  • turnip or parsnips
  • 1 can tomato soup
  • water
  • thyme, basil, 1 tsp sugar, salt and pepper

Directions

  1. Brown hamburger, with onions, celery, carrots, (parsnips or turnip – optional) and potatoes. Add tomato juice and water to cover. Add sugar, basil, thyme, salt and pepper to taste. Simmer, the longer the better. I like to add frozen mixed vegetables to boost the vegetable content.

Directions

  1. Put ham in large pot. Cover ham with water. Add 1 cup of wine, one onion studded with cloves, 2 bay leaves, 6 pepper corns. Boil 1 ½ hours.
  2. Remove from water, put in roaster. Score fat in Diamonds. Place whole cloves 1 ½ inch apart all over top and bottom.
  3. In a bowl mix 1 cup orange juice, ½ cup honey, ½ cup brown sugar. Add more orange juice if needed. Add 4 shakes ground cloves, 1 tbsp dry mustard. I tbsp. and 5 good shakes of ginger. Microwave until blended. Don’t boil. Smear glaze all over ham. Baste with remainder as ham cooks.
  4. Cook ham (small) for 2 hours @ 325 degrees.
