Snowball Cookies

Yield

2-3 dozen

Ingredients

  • 8 tbsp soft butter or half and half with shortening
  • 2 tbsp sugar (brown or white)
  • 1 cup ground nuts or peanut butter
  • 1 cup flour or enough to make soft dough.
  • 1 tsp vanilla
  • pinch salt

Directions

  1. Mix together. Wrap dough aroun glazed cherry. Bake 350 degrees for about 10 minutes. Roll in ground nuts or icing sugarwhen still warm from the oven.

Skippy Peanut butter chip cookies

Ingredients

  • 1 cup skippy chunky peanut butter
  • 1 cup butter
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • ½ cup chocolate chips

Directions

  1. Cream peanut butter and butter in large bowl. Gradually beat in sugar, brown sugar and eggs. Combine all purpose four, whole wheat flour and baking soda. Stir into creamed mixture. Stir in chocolate chips. Drop by spoonfuls onto cookie sheet. Flatten with fork. Bake at 350º for 10 minutes

Shortbread (Grandma Green)

Yield

6 dozen

Ingredients

  • 1 pound butter with 1 tbsp lard
  • ½ cup icing sugar
  • ½ cup white sugar
  • 3 ½ cups flour- fill with ½ cup corn starch

Directions

  1. Cream butter, lard and sugars. Add four 1 cup at a time
  2. Roll to ¼ inch thick, Cut cookies and place on ungreased cookie sheet.
  3. Bake 300º until golden brown, about 25 minutes

Shortbread – Elvera

Yield

3-4 dozen

Ingredients

  • ½ lb margarine
  • ½ lb. butter
  • 1 ½ cups icing sugar
  • 2 tbsp cornstarch
  • salt
  • 4 cups sugar

Directions

  1. Mix
  2. Drop onto ungreased cookie sheet
  3. Bake 300 degrees 10-12 minutes or until lightly browned.
