Chinese stuffed mushrooms

Ingredients

  • 20 large fresh mushrooms
  • ¼ lb. raw shrimp (shelled and deveined)
  • ½ lb. raw ground pork
  • 3 tbsp chopped green onion
  • 1 cup beef broth
  • 3 tbsp soy sauce
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp flour

Directions

  1. Wash and drain mushrooms, remove stems. Chop shrimp, pork, onion very fine. Blend in 1 tbsp soy sauce, salt pepper and flour. Shape into small balls and stuff mushrooms. Pour the broth and remaining soy sauce into a large skillet and arrange the mushrooms in it stuffed side up. Cover and cook over low heat for 20 minutes or until pork is done.

Chicken Wings

Ingredients

  • 2 to 3 dozen chicken wings
  • 1 large onion chopped
  • ½ cup vinegar
  • ½ cup ketchup
  • 4 tbsp brown sugar
  • 2 tbsp soy sauce (or Worcestershire)
  • 2 tbsp honey (more)
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper

Directions

  1. Mix together, pour on wings (in casserole dish) Bake uncovered for 2 to 4 hours at 325º or until sauce is to your desired consistency.

Chicago Dip

Ingredients

  • 1 pkg of chopped spinach thawed and drained
  • 1 bunch of green onions, chopped (reserve ½ for topping)
  • 2 large cloves of garlic chopped fine
  • ¼ cup mayonnaise
  • 1 pkg or cream cheese (optional)
  • ¼ cup sour cream
  • 2 cups of shredded Swiss cheese
  • 1 tbsp parsley (fresh or dried)
  • ½ tsp red pepper flakes
  • ½ tsp fresh ground pepper and salt to taste
  • 1 small roma tomato chopped.

Directions

  1. Combine all ingredients and pour into 2 or 3 pie plates and bake for 20 to 30 minutes at 35o degrees or until bubbly and edges start to brown. Remove from oven and top with green onions and chopped roma tomatoes. Serve immediately with warm nacho or pita chips or torn pumpernickel. This recipe may be halved

Bruschetta

Ingredients

  • ½ cup salad dressing or mayonnaise
  • 1 cup grated mozzarella cheese
  • 2 medium tomatoes, seeded and finely diced
  • ¼ cup chopped pitted ripe olives
  • ¼ cup grated fresh parmesan cheese
  • 1 tsp dried whole oregano
  • ¼ tsp dried sweet basil
  • ½ tsp pepper
  • 1 baguette bread loaf
  • 1/3 cup hard margarine or butter softened

Directions

  1. Combine first 8 ingredients in small bowl
  2. Cut baguette into 1 inch slices. Divide and spread margarine on 1 side of each slice. Place, buttered-side up on ungreased baking sheet. Divide and spread tomato mixture on bread slices. Bake in 350 degree oven for about 15 min. until hot and cheese is melted. Serve warm, Makes about 24 appetizers.

Black Bean Salsa

Ingredients

  • 1 can black beans
  • 1 mango peeled and chopped ( or canned corn)
  • 1 green pepper chopped
  • 2 plum tomatoes, seeded and chopped
  • 4 green onions chopped
  • 1/4 cup Italian salad dressing
  • 1 tbsp lime juice
  • 2 tsp fresh cilantro
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
  • 1/2 tsp chili pepper
  • 1/2 tsp hot sauce

Directions

  1. combine and chill for 1 hour
