Foamy Lemon Pudding

Ingredients

  • 1 1/3 c. milk
  • 3 tbsp butter
  • 3 eggs separated
  • 1 cup sugar
  • 1/8 tsp. salt
  • 1.4 c sifted flour
  • 2 lemons, rind and juice (1/3 cup)

Directions

  1. Heat butter in milk until melted
  2. Beat egg whites stiff, beat in ¼ of sugar, add salt
  3. Beat egg yolks, beat in remaining sugar, stir in flour and fruit juice and rind, blend in milk and butter
  4. fold in egg whites, pour into custard cups or shallow 1 quart casserole
  5. Oven poach at 325 degrees for 30 min. for custard cups, 45 min. for casserole. ( Put in shallow pan with water in it)
