Rod’s favourite cookies

Ingredients

  • 1 cup butter
  • 1 ½ sugar
  • 3 eggs
  • 1 tsp soda
  • 1 ½ tbsp hot water
  • 3 ¼ cups flour
  • ½ tsp ginger
  • ½ tsp mace
  • ½ tsp lemon juice
  • 1 ½ cup walnuts (optional)
  • 1 cup raisins
  • ½ tsp salt

Directions

  1. Cream butter and sugar, add beaten eggs and soda that has been dissolved in hot water. Add the rest of the ingredients. Mix well and chill (I never do) Drop onto cookie sheet. Bake 350º for 10 minutes

Ingredients

  • 1 cup corn syrup
  • 1 cup peanut butter
  • 1 cup chocolate chips
  • 1 tsp vanilla
  • 3 cups rice crispies
  • 1 cup peanuts

Directions

  1. Put first 4 ingredients together in a pan, bring to a boil, stirring constantly. Remove from heat and add rice crispies and peanuts.
  2. Place in a 9 X 9 pan. Sprinkle with coconut.

Ingredients

  • 1 ¼ cup flour
  • ¼ tsp soda
  • ½ tsp salt
  • ¼ cup brown sugar
  • ½ cup butter
  • ¼ cup white sugar
  • 1 egg
  • ½ tsp vanilla
  • Filling:
  • ½ lb. dates
  • 1/3 cup water
  • ¼ cup sugar
  • ½ cup nuts chopped
  • 2 tsp lemon juice
  • Lemon rind

Directions

  1. make dough. Roll into rectangle. Cook filling and cool. Spread filling over the dough and roll up into pinwheel. Chill firmly. Slice and bake at 350 degrees for 8-10 minutes

Date Orange Softies

3-4 dozen

Ingredients

  • 1 8 oz package dates chopped
  • ½ cup packed brown sugar
  • 1.2 cup butter
  • 1 can orange juice frozen
  • 2 eggs
  • 1 ¼ cup sifted flour
  • 1 tsp salt
  • 3/4 tsp baking soda
  • 1- 6 oz butterscotch ships
  • 2- 1 cup nuts

Directions

  1. Cook first 4 ingredients stirring till slightly thickened. Add egg. Sift together flour, salt, soda & morsels and nuts.
  2. Add to first mixture
  3. Drop 2 inches apart.
  4. Bake 375 for 1- minutes.

Corn flake Macaroons

3 dozen

Ingredients

  • 2 egg whites beaten
  • 1 cup sugar
  • 1 cup coconut
  • ½ cup chopped nuts
  • 2 cups corn flakes
  • 1 tsp vanilla
  • 1 tbsp flour

Directions

  1. Bake in slow oven – 300 degrees for about 15 minutes.
